Could you ask the members if they know anyone that can sand down a painted 60qt mixer and respray it with food safe white paint?

1. USS in Northampton used to do this but im not sure if they still do, worth a try though.
2. I was once advised that you could not do this as the paint my end up flaking off and going in the mixing bowl…

Question

We are looking at specifying an electric 5kg coffee roaster in the ground floor of a 10-storey building. Cannot vent externally due to being listed so has to go to roof.
Manufacturers literature refers to flammable products being given off during the process and very high temperature of the exhaust gasses. Also chaff collection.
Does anyone have any experience of installing these and how the extract system functions safely?

1. We have used these in the past from Fracino but re only small.
   They do however require ducting due to the smoke as a result of the final roasting process
2. he issue that your member has is something that I have dealt with before. Ventilation for this type of operation can be achieved but it doesn’t come cheap as the extract duct will most likely need to be fire rated right through the building as well as needing other specialised plant.

Question

Can the membership recommend any project management software that they are happy with?

It needs to be able to manage multiple projects, be able to schedule staff as a resource but for a smaller business so will only need up to 10 user logins. I expect it will be web based but even better if is app based too.

I have a request please from a customer for a small glass / bottle crusher, either behind a bar or back of house area but only small.

1. I would advise they speak with Gary Barnabas at IMC; they have a solution for exactly that which is 300-400mm wide and fits within a backbar.
2. We would recommend IMC
3. I believe Metcalfe have one that is about 500mm wide.

We require an external catering scheme designer working in Revit to carry out designs for a  BIM Level 2 scheme we are involved with.  This person should have experience in implementing BIM Level 2 on previous projects.

Question

Does anyone know of a good “drop in”  gas fryer twin basket, single tank with V shaped well ideally not a tube fryer please?  I know of the solstice unit by Pitco but it’s too deep front to back to fit into counter needs to be smaller than 600 x 800 deep.

1. We have used Giga drop in units in the past and have found them to be reliable.
2. Valentine do a drop in fryer. Can’t remember the specifics of it but worth looking at. I also think Fry Fry (Lincat) may do a couple of models.
3. We would suggest Valentine.

Can any CEDA Member recommend a building/installation company who can work in London and Home Counties? They need to be gas registered and have their own electricians (or subbies).

1. We carry out minor building works, are gas safe registered and have electrical sub contractors, Home Counties is a large area but willing to discuss, travelling sometimes restrictive.
