Mollie’s Bar and Diner Manchester represents the most ambitious development in the brand’s portfolio to date, transforming the former Granada Television Studios into a vibrant hospitality destination that combines accommodation, dining, bars and quick-service operations under one roof. As the largest Mollie’s venue yet, the project required NWCE Foodservice Equipment to deliver a complex, multi-floor foodservice operation that balanced the character of a historic building with the operational demands of a modern, high-volume hospitality business. The result is a destination that celebrates the site’s heritage while supporting Mollie’s distinctive take on the classic American diner experience.
The scale and diversity of the operation made the project particularly demanding. Across multiple levels, NWCE delivered a central diner kitchen, a dedicated quick-service restaurant, extensive bar facilities, guest service areas and supporting back-of-house infrastructure. Each area required a tailored solution while remaining connected as part of a seamless operational ecosystem. Significant design development was undertaken throughout the project, including bespoke bar fabrication, reconfigured service areas and the adoption of innovative electric Synergy grills, which provide the flavour and performance associated with traditional charcoal cooking while reducing carbon emissions and simplifying ventilation requirements.
The project also demanded exceptional adaptability. Following the collapse of the original main contractor, the programme faced a prolonged period of uncertainty before being successfully restarted under a new construction team. Combined with city-centre delivery restrictions, listed-building considerations, evolving site conditions and numerous late-stage design challenges, the scheme required continuous collaboration, redesign and problem-solving. Through meticulous planning and close coordination with all stakeholders, NWCE successfully delivered a sophisticated hospitality operation that supports multiple revenue streams, enhances operational efficiency and provides a landmark destination within one of Manchester’s most iconic buildings.
