PICK.YOUR.OWN. (P.Y.O.) is a new sustainable food concept launched by Christian West, offering a fully organic, zero-waste menu through a subscription model. With just two months to design and deliver the first site in time for the pre-Christmas opening, Space was tasked with turning a blank canvas into a fully functional, eco-conscious restaurant in the heart of Central London.
Led by Neil Mantle, who shaped the brief and managed client relations, the project was a tight collaboration across the Space team. Hollie Gardner, Lead Designer, translated the client’s vision into a smart, visually striking layout—blending operational efficiency with organic aesthetics. James Chuter, Project Manager, coordinated trades, site logistics, and compliance, while Hannah Clive managed procurement and supply timelines, keeping everything on track.
All front-of-house elements—including counters, shelving, and bespoke features—were manufactured in-house, using reclaimed materials like farmhouse crate timber. The 10-meter main counter was delivered in modular sections, with custom finishes and a rugged pendant heatlamp feature, designed and fabricated to match the sustainable brief. Functional requirements like complex corner angles, hidden services access, and tight plumbing constraints were resolved through precise coordination and smart design solutions.
In the kitchen, we installed high-performance, energy-efficient equipment tailored to P.Y.O.’s farm-to-plate model. Prep space was optimized with undercounter storage and wall-mounted shelving, keeping the workflow clean and efficient despite tight dimensions.
Despite the central London location and short lead time, the site was delivered on schedule and to spec. Training was provided by Unox on key appliances, and Space supported the client through handover with a full digital O&M pack and on-site transition support.
The result: a stylish, purpose-built restaurant that captures the brand’s mission of sustainability, functionality, and future-ready design.
