The renovation of Osip’s new location in Somerset involved transforming a historic 18th-century pub into a modern farm-to-table restaurant while preserving its original charm. The project centred around creating an open, contemporary kitchen that would be visible to diners, offering an immersive experience. The kitchen was designed within a bespoke glass cube, allowing guests to see the cooking process while enjoying panoramic views of the surrounding countryside.

The design balanced modernity with tradition, incorporating sleek, monolithic lines and high quality materials such as DA finish steel and locally sourced wood. A key feature was the restaurant’s open plan layout, which included a forty cover dining area, a central bar, and four bespoke double bedrooms on the upper floors. Each of these spaces was crafted to harmonise with the building’s historical features, with careful attention paid to preserving original elements like stone walls and the unique earthenware floors.

The open kitchen, designed with functionality and organisation in mind, was an integral part of the dining experience. The client’s request for a clean, organised space was met by ensuring that the kitchen remained tidy and aesthetically pleasing while also being fully operational. Special attention was given to storage solutions, ensuring the space did not appear messy despite its open nature.

The project was completed on budget, with the design and construction process carefully managed to deliver both the functional and aesthetic goals set by the client. Sustainability was a key focus throughout, with the farm-to-table ethos being reflected in the design, materials, and the connection between the restaurant and the surrounding fields. The building’s proximity to local farms and use of seasonal ingredients were emphasised, reinforcing the restaurant’s commitment to sustainability.

This transformation not only preserved the historic essence of the building but also created a fresh, vibrant space that embodies the restaurant’s core values of craftsmanship, sustainability, and a modern approach to dining.
