LI~LY Restaurant by Aiden Byrne

The “LI~LY” project represented a unique and challenging undertaking, transforming a historic Grade II-listed building in Knutsford into an exclusive fine dining restaurant for renowned chef Aiden Byrne and his wife, Sarah. The project’s success was rooted in a highly collaborative design process, with Aiden Byrne directly shaping the kitchen’s layout and equipment selection through real-time consultation.

The project presented numerous complexities, including the client’s mid-design equipment change, the building’s structural irregularities, and restricted access to the prep kitchen. Energy efficiency was a key consideration, with all-electric equipment and induction hobs contributing to a reduced carbon footprint. A Unox XECC‐0513‐EPLM combi oven with a condenser system was selected to address the absence of an extract system in the upstairs prep kitchen.

Installation was complicated by the building’s age, narrow access, and the discovery of a burst water pipe. A phased delivery strategy and meticulous on-site coordination ensured the project’s timely completion. The unexpected absence of a three-phase electrical supply required the provision of alternative single-phase equipment and the conversion of existing appliances. The remaining commissioning of the main cookline is pending the installation of three-phase power.

Comprehensive training was provided to the client, including on-site training from Electrolux. Snagging was completed promptly, with minor fabrication adjustments made to address the building’s non-square walls. The project has required no subsequent “day-2” works.

Despite the challenges, “LI~LY” successfully opened its doors, fulfilling the client’s vision for an exclusive and sustainable dining experience. The project stands as a testament to effective collaboration, innovative problem-solving, and meticulous execution in the face of significant constraints.
