This is as authentic as it comes and, one of the quickest new Michelin star gained in the UK. 

Chef Shinji Kanesaka’s London outpost from Japan, escorted up to the ‘hidden room’ on the first floor of 45 park lane. Here, a small prep kitchen awaits, with 2 short open kitchen counters all by Advance (a 9 seater and 4 seater). A compact space to say the least, but one of the most premium restaurants in London, at an eye watering £450 per head for lunch! It is acknowledged by many as the ultimate destination for a traditional sushi experience.

The kitchen counters are a single piece of hinoki cypress wood, overseeing masters at work in Advances slick kitchen design.

The omakase menu (meaning “ill leave it up to you”)  is made up of around 18 pieces, with the stunning nigiri interspersed with dishes such as steamed abalone or grilled Kobe beef. Much of the seafood is from European waters, while the rice is from Yamagata.

A project at the extreme fine dining end of the market, for an exacting multi Michelin chef delivering a very delicate product, that required a kitchen design with precision, consideration and excellence in installation and post sales service.
