Vision Commercial Kitchens

Ego Restaurants is a family of Mediterranean inspired Pubs and Restaurants, which currently have 24 sites.

We completed three projects for Ego in 2020: Ego at The Pomeroy in Amersham, Ego at The Schooner Inn in Penarth and Ego at Running Mare in Chelmesford. As well as this, throughout all of their units, we provide all of their service requirements, including preventative maintenance and break down service as well as providing their one-off pieces of equipment when needed.

At each of the projects completed in 2020, we took their initial brief and conducted an initial site visit to understand the building and service requirements. There is an agreed, general footprint of catering equipment which is required for each Ego restaurant, and so the site visit is important to establish how the equipment will be incorporated into the building given the service requirements etc. We then design the foodservice areas, which include the kitchen, all storage facilities and the bar. The design is carried out to accommodate all the pre-discussed and agreed equipment which is needed to carry out the menu efficiently. The building contractors and M&E contractors then carry out a complete refurbishment of the building and fit out.

With each building being a refurbishment rather than purpose built, the shape and size of kitchen space etc. is different. The buildings themselves are also usually old difficult buildings. Therefore although incorporating the necessary equipment into each kitchen design, the design is reconfigured in accordance with each individual building to ensure that the site will work effectively. The menu at Ego is a coordinated menu throughout their restaurants in the UK and so the design enables the delivery of that menu throughout the different sites. The restaurants for each new Ego site undergoes a full internal fit out and the programmes are very tight. From our first site visit to handing over a fully functional, completed kitchen takes place within 12 weeks or less and so follows a very strict timeframe.
